No need to do that.

For one, you could always rename OmniWeb.app version 1 to be
OmniWeb-1.app (renaming an app wrapper is a multi-step process,
but pretty trivial).

For two, you could just move OmniWeb.app version 1 to some other
directory.  I have OmniWeb version 2 beta in /LocalApps, and OmniWeb
version 1 in /LocalXtras.  Thus, OmniWeb version 2 is the default
for me, but I can always start up version 1 if I want to.

Though, with the release of this second beta, it's pretty rare that
I ever want to...
