I'm not quite sure what's not working here. Can you post an image  
somewhere?

This is easy:

FILE --> Page Setup / Settings: OmniOutliner Pro

When you're looking at your various headings, just select them like  
you normally would and then CMD + T to bring up the OS X Type panel.  
(Derek et al. --> might be nice to see these styles show up in the  
style pane of the Utility Drawer in OOP4 ;)  .)

Widow/orphan control isn't really possible -- at least I've yet to  
find a workable workaround, but it'd be nice to have.
