I'm not positive I know what you mean by folding because I can't figure out
how to execute that feature in Word. In MORE, one could collapse multi-line
rows into a single line of text, and this was folding. If that's what you
mean and with this definition in mind:

All things are possible with AppleScript, but this wouldn't be worth the
trouble of writing it. It'd be way too slow to fold all the rows of big
outlines. Plus, the script writer would have to store the "hidden" text
somewhere outside the outline, since OO doesn't have a provision for this.
Consequently, for the amount of time I, for one, would be willing to spend
writing it, there'd be too large a risk of losing others' data.
