This works for me:
Type in the x, then insert the bar from the character palette.
That was easy to say, but showing and using the character palette is
incredibly obscure. Go the Input Menu tab of International preferences in
System Preferences and check "Character Palette." Make sure "Show input menu
in menu bar" is also checked. A little national flag will show up in the
menubar. Pick "Show Character Palette" in its menu. Pick "Code Tables" in
the View pull-down at the top of the palette to get to Combining Diacritical
Marks. Select the bar and click Insert.
