That's only half the question, I'm afraid.

Yes, Mail.app will work well as an IMAP client, getting the mail from
the Exchange server. However, is that what she needs? Exchange has a
whole lot more to it, as evidenced by the ActiveSync presentation for
the iPhone.

If she just needs mail, it'll do a great job (as long as IMAP is
active on the Exchange server) at that. If she needs contacts,
appointments, etc., you'll need to dig deeper into her needs.
