Extracting Audio from a DVD

I have a DVD (not copy protected non-commercial) that I want to  
extract a portion of the audio and turn it into a stand-alone mp3 file.

What's the easiest way to rip out the audio stream so I can, I dunno,  
drop it on GarageBand and clip the part I want?
