setting up a RAID 0 in a MacPro - stripe size best for video/audio?

I got my 3 Spinpoint F1 drives today and popped them in the new DUAL  
QUAD.  Wow!  nothing could be simpler - I think I put all three drives  
in place in less than 3 minutes. Nice machine!

I'm not sure, however, how to set up the striping for the RAID 0.

Using DISK UTILITY: the RAID block size options are 16k, 32k, 64k,  
128k, and 256k

As I'll be using the RAID for hi-res video and audio (large files),  
should I go with 256k?

when I search GOOGLE for advice, people were suggesting 512k, but the  
built-in controller on my new DUAL QUAD doesn't provide that option.

should I get a RAID controller? or go with the built-in and 256k ?
