IMAP Notes

I'm confused.

I use notes and I'm sure this is being stored on my server

In the Composing preference the option is Create Notes & ToDo's in:  
and allows me to pick a mailbox.  none of my notes show up in my  
inbox, just in the notes disclosure. The option is to select the  
account, not the inbox
