Based on information from "someone in the know":

Using Final Cut with tape based cameras, video capture cards / break-
out boxes will allow you to use a separate audio source during
capture. This is, however, not possible if you're using HDV. It's
also not possible in iMovie 08 regardless of the camera used.
In all cases you can, of course, record your audio and video
separately for later import and manual synchronization.

Continuing with my own non-authoritative opinions:
This (separate audio and video sources for live capture) is a pro-
level feature, so I don't think that you should set your expectations
on having it available in the iLife apps. I find it unlikely that
there could be enough consumer user interest for it to become a
priority. That said: What would I know, and you should in any case of
course continue to use the available feedback channels to provide
Apple with your suggestions for improvements.
