One way is to close all your Finder windows, then open one, change it  
to list view, then close it again. That should save the preference to  
open all windows in list view.

This is a little trick with the Finder - open a single window, change  
only one thing, then close it again. That is saved for future  
windows. But you have to have only that one open and only change one  
thing at once. Changing two things won't work. You have to change  
them each one at a time.
