A few questions I should not have to ask....

Hello Everyone,
So I have two questions that I cannot find an answer to.
1. I want EVERY window that I open from the Finder to show up in List View.
I cannot seem to find a place to change this. I thought you could.
2. Is there a way to re-build the Application "database"? What I mean is
when you right click on a file and select open with, I get a ton of things i
can open with. Some of which I believe are deleted from my system. Some of
which I have multiple versions for testing sake, but I always want to open
in the latest unless from this menu,
Is there a file that I can edit that lets me associate what extension and
what programs to offer to open it with?
Is there some way i can say only offer application possibilities from
/Applications and no place else (say the app resides in one of my
development folders or some other place?)
Does anyone know how to do either of these?
Thanks,
Jason
