IMAP is attractive to me for several reasons:

1) Another backup of mail, if your machine goes kaput, your mail is  
still online and available.

2) Because it's still available, if you are not near your machine,  
you can usually get to it from any web browser, including all of your  
folders.

3) As David mentions above, it's a must for people with multiple  
machines.
