First develop a Backup Policy

Second develop a Backup Strategy. It will be driven by the above.

THEN work on this topic of backup implementation as it is driven by  
the above two.

That said there's tar and a host of other tools. Media for backup  
often will determine tools too.

Like all backups you need a quiescent filesystem, so stop mail before  
the backup so the db's are closed.
