Automated Backup

I have a couple of Apple Xserves. I was wondering what people use for 
automated backup scripts.  I would be initially be backing up to a 
XServe Raid array. Also, we use one of our XServes as a mail server. Has 
anyone looked at how to they would implement a backup mail server?
