A profile is specific to a physical display so it is correct behavior
to have displays retain their profile regardless of mirroring being
used (it shouldn't inherit the profile of the display it is
mirroring).

The real "bug" is that when mirroring is enabled the "Displays" system
preference doesn't provide a way to adjust the profile of the
secondary display in the mirror, you can only adjust the profile for
primary display in the mirror set.

As noted you can disable mirroring and then the "Displays" system
preference will expose the ability to adjust the profile of the
secondary display.
