 Color Profiles

 Assign Profiles...
 Convert to Profiles...
Assign Profiles... brings up a sheet that lets you choose specific profiles to use for this document, or not to color manage the document at all. This sheet doesn't change the document's color values at all, just the way in which they are interpreted when going to the screen or printing. So assigning a new set of profiles can visibly change the color appearance, since the old values will be interpreted in a new way.
Convert to Profiles... brings up a sheet that shows the document's current profiles and let you choose new ones. This sheet performs a set of ColorSync conversions directly on all of the colors/images used in the document, changing their color values. But then during display the new color values are converted from the new profiles to the display profile, so the appearance of the colors may not visibly change.
